Stock reports
Ingredient usage for a period, movements, stock levels, stock count results and where things leak.
Usage for a period
How much of a product was used and where: in sales, write-offs, transfers. This is the main report for talking to the kitchen.
Stock
Current stock by store, in quantity and in money. The total value of stock is frozen money; it is worth looking at once a month.
Movements
The full history of a product: every receipt, write-off, transfer, sale. It answers the question “where did this figure come from”.
Stock counts
Results of counts: differences per product in quantity and in money, for each stock count. A regular shortage of one product is a reason to check its recipe before checking people.
How to find a leak
- Open the usage report for the month — find the products with the largest usage in money.
- Compare the calculated usage with the actual usage from the stock count.
- Where the difference is large, open the recipes of the dishes that use that product.
- If the recipes are correct — look at write-offs and items voided after they went to the kitchen.
