Links: what is made of what

A screen that shows where a product is used and what a dish is made of — top-down and bottom-up.

It answers the two questions that come up before every menu change.

Top-down: what a dish is made of — with preparations expanded down to the raw products.

Bottom-up: where a product is used — in which dishes directly, in which through preparations, in which modifiers.

Why you need it

  • before changing a unit or a pack — to see what will be affected;
  • before taking a product off the menu — to understand which dishes will be left without ingredients;
  • when food cost rises — to find exactly where the more expensive product goes;
  • when a product is stopped — to understand what will stop selling.

Marks

The list shows which items have no recipe and which products are not stock-tracked: their usage is not counted. It is a quick way to find holes in recipes.
